Boardwalk Fries

2 ½ lbs White Potatoes; wash and peel leaving ends on
Oil for deep frying
Paper towels or paper bag

1. Cut potatoes into long thick strips
2. Heat oil to 325º
3. Fry potatoes for 4 minutes; remove to paper towels or bag to drain
4. Reheat oil to 425º
5. Fry potatoes for a second time until golden brown; remove to paper towels or bag
6. Salt to Taste

Serve with Malt Vinegar and Ketchup
