Grandma's Mashed Potatoes

5 lbs white potatoes; washed, peeled and cut
Salted boiling water; enough to cover potatoes
2 - 8 oz pkgs. Cream cheese; cut into cubes
1 stick butter (not margarine); sliced into pats
½ - ¾ cup cream or whole milk
Salt & Pepper to taste

1. Boil potatoes until fork tender; drain well and place back into pot
2. Mash with potato masher or ricer add butter and continue to mash until melted
3. Add cream cheese; mix with electric mixer on low until melted and combined
4. Add enough cream/milk to consistency of whipped potatoes
5. Salt & Pepper to taste
